Meal prep is a new way of life for our family over the past 6 months and I have to say it has been the best thing ever. I feel as a mother I am always looking for ways to cut down on daily duties so I can be out doing more fun things with my daughter. "Work smart not hard" is truly the motto I live by. So with that said I have created a great EASY recipe that is super delicious and pretty healthy as well. I have created the recipe for 8 lunches or dinners but you can adjust the recipe to how many you need to make depending on your family size.

WHAT YOU NEED:
- 24 Oz Ground Turkey (we used Organic for better flavor)
- 8 Hamburger Buns
- 20 Oz Summer Beans
- 6 Cloves Garlic (I use minced Garlic from jar to cut down on prep time)
- 4 Ears of Corn
- 1.5 Yellow Onion
- 1 Bunch Thyme
- 1 Jar Dill Pickle Chips
- 2 Packets of Sloppy Joe Mix (I used BBQ flavor)
- Salt
- Pepper
- Olive Oil
INTSTRUCTIONS:
- Prepare ingredients: Preheat Oven to 425F. Wash and dry fresh produce. Heat medium pot of salted water to boiling on high. Halve the buns. Peel and small dice the onion. Trim off and discard stem ends of beans. (Tip: take a bunch at a time lay in even line and cut off ends all together and then do other side) Remove and discard husks and silks of corn. (Tip: buy corn already husked to cut down prep time) Pick thyme leaves off the stems, discard the stems and roughly chop the leaves.
- Boil the corn. (Corn is done when yellowed and floating. Take out of water and set aside to cool off. Keep the boiling water)
- Brown the turkey: In a large pot, heat 1 Tbs of olive oil on medium-high until hot. Add the ground turkey; season with salt and pepper. Cook frequently breaking the meat apart with a spoon, 6-10 minutes, or until lightly browned. Transfer to a bowl.
- Make the filing: In the pot used to brown the turkey, heat 1 Tbs of olive oil on medium-high until hot. Add the onion, and 3/4 of the garlic; season with salt and pepper. Cook, stirring occasionally 3-5 minutes, or until softened and fragrant. Add the browned turkey and sloppy joe mix. Cook, stirring occasionally, 3-5 minutes, or until all meat is mixed with sauce and slightly thickened. Remove from heat.
- Blanch the beans: While the filing cooks, add the beans to the boiling water from corn. Cook 3-5 minutes, or until slightly tender. Drain thoroughly; rinse under cold water for 30 sec to 1 minute to stop the cooking process.
- Finish the vegetables: While the filling continues to cook, cut the corn off the cob. Then in the pot used to blanch the beans and cook the corn, heat 1 tbs of olive oil on medium-high until hot. Add the corn, thyme, blanched beans and remaining garlic; season with salt and pepper. Cook, stirring occasionally, 1-2 minutes, or until thoroughly combined and fragrant.
- Finish: While the vegetables cook, place the buns on a sheet pan. Toast in the over 2 -3 minutes, or until lightly browned and crisp.
- Divide into tupperware: Take a bun put bottom half in tupperware and fill with the turkey filling. Place other half of bun on top. Now put a helping of vegetables in the tupperware. Repeat this until all tupperware are full. You can now place these in the fridge they are ready to eat.
