This is a great simple meal that everyone will absolutely love and will be wanting seconds! This dish is the number one favorite in our house!
16oz Kobi Beef (this is what I like to use the beef has great flavor, feel free to use others as well and if you are making this recipe as a vegetarian just x the meat out.)
2 Bags Chimichurri Rice (you can find these yummy rice at Trader Joes in the frozen section)
2 Limes
4 Poblano Peppers (you can also use regular Rep Peppers if your store does not have poblano)
1 Bunch Cilantro
1/4 cup olive oil
1/4 tsp salt
1. Preheat oven to 500F
2. Roast and prepare the poblano peppers. Cut the tops of the peppers and gut them out. Place the peppers on a sheet pan. Drizzle with olive oil and season with salt on the inside and outside of peppers. Roast int he over for 5-7 minutes or until skin is browned and blistered. Remove from the oven and set aside to cool.
3. White peppers cook prepare the meat. Turn your grill to 350F. Once its hot place meat inside and cook for 5 minutes or until meat is done. If cooking on stove place in pan and set to medium heat cook each side for 4 minutes until done.
4. Place meat on cutting board and cut 1/4 slices and put into large bowl.
5. Prepare rice. Follow ingredients on bag :) Once done place rice in the same bowl with meat and mix.
6. Cut both limes into 4 wedges.
7. Pick cilantro leaves off the stems and discard stems.
5. Place pepper on dinner plate and stuff rice and meat mix together. Squeeze a slice of lime over the top and garnish with cilantro and enjoy!
